Carob Almond Fudge



It's been quite a stretch since I made carob fudge this good. It's rich, nutty, and worthy of tiny bites. OK, big bites, too. But, be mindful of the calories. It's not low fat.

This fudgy candy is a breeze to make:

Ingredients:

1.5 cups unsweetened carob chips
1/2 cup cashew macadamia nut butter (or your favorite nut butter)
scant 1/2 cup agave nectar
3/4 cup toasted almonds

Directions:

1. Melt the chips in the top of a double boiler (or a bowl on top of a pot half filled with simmering water). Stir until smooth.
2. Mix in the nut butter until smooth.
3. Mix in the agave until well blended.
4. Fold in the nuts. I didn't chop mine, but next time I will.
5. Either press the fudge into an 8-in pan lined with parchment paper or mini muffin pans lined with mini liners.
6. Chill until set, then let come back to room temperature to enjoy.

Not vegan, regrettably. The chips I used had dairy in them. For some reason, carob chip makers cannot make vegan, unsweetened chips. Why, is beyond me.

sounds delicious! Looks like some good old fashioned vegan chocolate chips might do the trick to make it vegan :c) I have found some vegan carob chips at Whole Foods if you have one near you but I so prefer chocolate. Yum!

This fudge looks similar to the one we made, but with carob chips instead of cocoa. Sounds delicious! And if you didn't melt all the chips, I think it would be good with a slight crunch of chips in the fudge!

Hello, Deb,
I'm finally getting around to checking out your site. Very nice.
I am also chocolate free because of my husband getting migraines and it seems to be a trigger. This recipe does look delicious. Since I cook/bake vegan at home, I am wondering something.
Do you have a good homemade carob chip recipe? Like making some sort of hardened carob using powder in the recipe, then it could be "chipped" to use in place of chocolate or non-vegan carob chips. Just wondering.

That's an excellent question. I do not have a good homemade carob chip recipe, but I shall work on one because I really don't like all the extra junk that's in carob chips. Besides, it seems virtually impossible to find a vegan, unsweetened carob chip! What's with that??
