Graham Crackers Redux
One of the nicest things about recipes is that you can always go back and tweak them. Here's another take of the King Arthur Flour Cookie Companion's "The Best Graham Crackers." They're better this time around.

I had no idea that coconut flour absorbs some moisture (I think?) so that you can use agave one-for-one with sugar. I've been baking with agave for about 4 years now and always have to adjust the moist/dry ratios. Thanks for the neat video. I guess I really must find some coconut flour over here somewhere!

Coconut flour is so absorbent that I recommend only substituting up to a third of other flours in a recipe. Otherwise, it just gets too dry and mealy. Rule of thumb -- a quarter of a cup goes a long way towards "normalizing" a recipe with agave nectar. It does give recipes a richer, sweeter flavor and a very pleasant scent.
It's especially wonderful in brownie mixes. MMMM. Just going to have to make brownies very soon.
